Ingredients:
4 pork chops (about 1-inch thick)
4 ears of corn, husks and silk removed
2 red bell peppers, quartered
2 yellow bell peppers, quartered
1 cup cherry tomatoes
4 tablespoons olive oil
4 garlic cloves, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
1 tablespoon fresh oregano, finely chopped
Salt and freshly ground black pepper, to taste
Lemon wedges and additional fresh herbs for garnish
Instructions:
Marinate Pork Chops:
In a small bowl, mix 2 tablespoons of olive oil, half the minced garlic, rosemary, thyme, oregano, salt, and pepper.
Rub the mixture over both sides of the pork chops.
Let the pork chops marinate for at least 30 minutes, or up to 24 hours in the refrigerator for deeper flavor.
Prepare the Grill:
Preheat the grill to medium-high heat.
Grill the Vegetables:
Brush the corn, bell peppers, and cherry tomatoes with the remaining olive oil and season with salt and pepper.
Place the corn and bell peppers on the grill. Grill, turning occasionally, until they start to char and soften, about 10 minutes for the bell peppers and 15 minutes for the corn.
In the last 5 minutes, add the cherry tomatoes to the grill and cook until slightly charred and bursting.
Grill the Pork Chops:
Place the marinated pork chops on the grill.
Grill for about 7-8 minutes per side, or until the internal temperature reaches 145°F (63°C).
Remove the pork chops from the grill and let them rest for 5 minutes.
Serve:
Arrange the pork chops on a large platter.
Cut the grilled corn off the cob and mix with the grilled bell peppers and cherry tomatoes. Season the vegetable medley with extra herbs, if desired.
Serve the vegetable medley alongside the pork chops.
Garnish with lemon wedges and fresh herbs.
